Happy March folks! How is the first day of this month treating you so far? Is it in like a lion and (hopefully) out like a lamb? Or the other way around?
My morning involved driving through some lovely white precipitation in order to get to work, followed by my car demanding an oil change (this is my fault for avoiding it for so long), and a nice coffee scented scarf (due to my spillage). I think it’s safe to say that my March has definitely come “In like a LION“this year!
Dinner
Ok, moving on to more important things! Last night’s dinner was some baked haddock (recipe to come), with some arugula, beet and tomato salad on the side. It was colorful, delicious and filling. Definitely a winner!
Here is a close up of the beet salad which was just some canned and sliced beets, drizzled with some olive oil and topped with some shaved paramsen cheese. Nothing like some colorful veggies to brighten up a dark and snowy evening, right?
Breakfast
This morning’s breakfast definitely settled my roaring appetite (aren’t you loving all of these lion references?) I enjoyed my usual cup of plain Chobani, with some almonds and ground flax seed. One of these days I will change it up for you, I swear!
Nothing too demanding on the schedule for the rest of the day guys. I hope the snow let’s out so that I have a smooth and fast commute back home. I am SO ready for the weekend!!!

Ooh I love that yogurt snack and I HAVE to remember to eat beets like this more often. I love them so much and just never remember to put them on salads – I’m the same way with things like marinated artichokes. Such great salad toppers and additions and I just never remember to do it. The beet salad looks FAB!

I sometimes forget to eat beets too! I prefer roasting them myself, but it takes SO long! The canned ones are quick and easy and taste just as good!
Are they canned in vinegar?
I don’t believe that they are…
Okay either way they sound like something I need to try!
I have protein pancakes topped with peanut butter quote often…but whey I think about having something else, I always think it won’t be as tasty as the pancakes so I just make the usual instead. I have been having eggs and ekexiel toast with a glass of unsweetend almond milk this week- I love drippy eggs!
